Ingredients

  • 3 french rolls or 1 (about 14 inches)
  • — baguette
  • butter or margarine
  • lettuce leaves
  • 2 tomatoes — sliced
  • 1/2 cup sliced mushrooms
  • 1/2 cup alfalfa sprouts
  • 1/3 cup sliced ripe olives
  • 1 small avocado — peeled and sliced
  • 6 ounces pink shrimp
  • — (about 1-1/4 to 1-2/3 cups)

Method

  1. Split and butter French rolls
  2. Layer lettuce, tomatoes, mushrooms, sprouts, olives, avocado and shrimp on bottom half of rolls
  3. Add top halves
  4. Variation: Sandwiches may be served open-faced-style
  5. Tip: Serve with mayonnaise, Thousand Island dressing or lemon juice if desired
