Ingredients
- 3 french rolls or 1 (about 14 inches)
- — baguette
- butter or margarine
- lettuce leaves
- 2 tomatoes — sliced
- 1/2 cup sliced mushrooms
- 1/2 cup alfalfa sprouts
- 1/3 cup sliced ripe olives
- 1 small avocado — peeled and sliced
- 6 ounces pink shrimp
- — (about 1-1/4 to 1-2/3 cups)
Method
- Split and butter French rolls
- Layer lettuce, tomatoes, mushrooms, sprouts, olives, avocado and shrimp on bottom half of rolls
- Add top halves
- Variation: Sandwiches may be served open-faced-style
- Tip: Serve with mayonnaise, Thousand Island dressing or lemon juice if desired
