Ingredients
Makes 4 to 6 servings
- 1 cup pearl barley
- 1 1/2 cups cooked or 1 can navy beans, drained and rinsed
- 1 celery rib, finely chopped
- 1 medium carrot, shredded
- 3 green onions, minced
- 1/2 cup chopped pitted kalamata olives
- 1/2 cup dried cherries or sweetened dried cranberries
- 1/2 cup toasted pecans pieces, coarsely chopped
- 1/2 cup minced fresh parsley
- 1 garlic clove, pressed
- 3 tablespoons sherry vinegar
- salt and freshly ground black pepper
- 1/4 cup grapeseed oil
Method
- In a large saucepan, bring 2 1/2 cups salted water to boil over high heat
- Add the barley and return to a boil
- Reduce heat to low, cover and simmer until the barley is tender, about 30 minutes
- Transfer to a serving bowl
- Add the beans, celery, carrot, green onions, olives, cherries, pecans and parsley
- Set aside
- In a small bowl, combine the garlic, vinegar and salt and pepper to taste
- Whisk in the oil until well blended
- Pour the dressing over the salad, toss to combine and serve
