Secrets Barley Salad Recipe

Ingredients

Makes 4 to 6 servings

  • 1 cup pearl barley
  • 1 1/2 cups cooked or 1 can navy beans, drained and rinsed
  • 1 celery rib, finely chopped
  • 1 medium carrot, shredded
  • 3 green onions, minced
  • 1/2 cup chopped pitted kalamata olives
  • 1/2 cup dried cherries or sweetened dried cranberries
  • 1/2 cup toasted pecans pieces, coarsely chopped
  • 1/2 cup minced fresh parsley
  • 1 garlic clove, pressed
  • 3 tablespoons sherry vinegar
  • salt and freshly ground black pepper
  • 1/4 cup grapeseed oil

Method

  1. In a large saucepan, bring 2 1/2 cups salted water to boil over high heat
  2. Add the barley and return to a boil
  3. Reduce heat to low, cover and simmer until the barley is tender, about 30 minutes
  4. Transfer to a serving bowl
  5. Add the beans, celery, carrot, green onions, olives, cherries, pecans and parsley
  6. Set aside
  7. In a small bowl, combine the garlic, vinegar and salt and pepper to taste
  8. Whisk in the oil until well blended
  9. Pour the dressing over the salad, toss to combine and serve
