Seafood Cakes Recipe

Ingredients

  • Serving Size : 8
  • 1 can tuna in water – drained (12 1/2 oz)
  • 1/2 cup Miracle Whip or Miracle Whip Light
  • 1/4 cup Dijon mustard
  • 1/4 cup chopped celery
  • 1/4 cup chopped green onions
  • 1/4 cup chopped green peppers
  • 1 jar chopped pimiento – drained (2 oz)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/4 cups dry bread crumbs – divided

Method

  1. Oil
  2. Mix tuna, mustard, vegetables, pimiento, seasoning and 1/2 cup of the bread crumbs.
  3. Shape mixture into 15 (2″) balls.
  4. Roll in remaining 3/4 cup bread crumbs, coating well.
  5. Flatten balls into small patties.
  6. Refrigerate 30 minutes.
  7. Heat 1/2 cup oil in large skillet over medium-high heat.
  8. Add tuna patties.
  9. Cook 5 minutes on each side or until golden brown, adding additional oil as needed.
  10. Remove from skillet; drain on paper towels.
