Scandinavian Cod Platter Seafood Recipe

Ingredients

  • 1 1/2 pounds cod fillets — thawed if necessary
  • 1/4 cup chopped onion
  • 3 tablespoons butter or margarine — divided
  • 1/2 cup water
  • 1/4 cup dry white wine
  • salt
  • 6 peppercorns
  • half and half
  • 2 tablespoons flour
  • pepper
  • hot cooked new potatoes
  • hot cooked peas
  • minced parsley

Method

  1. Cut cod into serving-sized pieces
  2. Saute onion in 1 tbsp butter until tender
  3. Add water, wine, 1 tsp salt and peppercorns; bring to boil
  4. Add cod, reduce heat and simmer about 10 minutes or until cod flakes easily when tested with a fork
  5. Remove cod to platter; keep warm
  6. Strain poaching liquid; add half-and-half to make 1 1/4 cups
  7. Melt 2 tbsp butter
  8. Stir in flour; cook 1 minute
  9. Gradually add poaching liquid mixture
  10. Cook and stir until thickened
  11. Season to taste with salt and pepper
  12. Arrange potatoes and peas on platter with cod
  13. Pour sauce over cod; garnish with parsley
  14. Makes 4 to 6 servings
