Ingredients
Makes 4 patties
- 1 cup water
- 1/2 cup amaranth
- salt
- 3 tablespoons olive oil
- 1/2 cup minced onion
- 1/2 cup shredded carrot
- 1/2 cup ground walnuts
- 1 teaspoon soy sauce
- 2 tablespoons wheat gluten flour (vital wheat gluten)
- 2 tablespoons minced fresh parsley or cilantro Freshly ground black pepper
Method
- In a small saucepan, bring the water to a boil over high heat
- Add the amaranth and salt to taste and reduce the heat to low
- Cover and simmer until the amaranth is cooked, about 15 to 20 minutes
- Set aside
- In a large skillet, heat 1 tablespoon of the oil over medium heat
- Add the onion and carrot
- Cover and cook until soft, 5 minutes
- Stir in the walnuts and cook, uncovered, 2 minutes longer
- Transfer the mixture to a large bowl
- Add the soy sauce, flour, parsley and salt and pepper to taste
- Add the cooked amaranth and stir to mix well
- Form the mixture into 4 patties
- Heat the remaining 2 tablespoons oil in a large nonstick skillet
- Add the patties and cook until browned on both sides, turning once, about 10 minutes total
- Serve immediately
