Ingredients
- 2 tbsps (28 ml) olive oil
- 1 cup (160 g) chopped onion
- 1 pound (455 g) turkey kielbasa, thinly sliced
- 2 cans (15 ounces, or 425 g) no-salt-added great northern beans, undrained
- 2 cups (490 g) no-salt-added tomato sauce
- 115g diced green chilies
- 1 cup (130 g) thinly sliced carrots
- ½ cup (75 g) chopped green bell pepper
- ¼ teaspoon Italian seasoning
- ½ teaspoon thyme
- ¼ teaspoon black pepper
Method
- Heat in oil in a large skillet over medium-high heat
- Saute onions and kielbasa until onions are soft
- Transfer onions and kielbasa to slow cooker
- Add all remaining ingredients to cooker and stir together well
- Cover and cook on low 8 to 10 hours or until vegetables are tender
- Yield: 8 servings
- Per serving: 214 g water; 320 calories (39% from fat, 20% from protein, 41% from carb)
