Salted Caramel Cheesecake Recipe

Ingredients

Crust:

  • 45 Oreo cookies, finely processed into crumbs
  • 7 tablespoons salted butter, melted

Salted Caramel Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup packed brown sugar
  • 3 eggs
  • 3/4 cup heavy whipping cream
  • 1/4 cup caramel flavored coffee syrup

Caramel Sauce:

  • 1/2 cup butter
  • 1 1/4 cups packed brown sugar
  • 2 tablespoons caramel-flavored coffee syrup
  • 1/2 cup heavy whipping cream
  • 1 1/2 teaspoons flaked sea salt

Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • 8 ounces heavy whipping cream

Method

  1. In a medium bowl, combine cookie crumbs and butter
  2. Press into the bottom and up the sides of a greased 9 inch springform pan
  3. Freeze for 15 minutes
  4. Preheat oven to 300F
  5. In a large mixing bowl, beat cream cheese with brown sugar until smooth
  6. Add in eggs, one at a time until just combined
  7. Stir in whipping cream and syrup until well blended
  8. Pour into crust
  9. Bake for 70 to 80 minutes, until center is almost set
  10. Cool in unheated oven with door ajar for 30 minutes
  11. Cool, cover and refrigerate overnight
  12. For caramel sauce, in a medium saucepan, bring butter, brown sugar and syrup to a boil, cooking until sugar dissolves
  13. Stir in whipping cream and return to a boil
  14. Remove from heat and cool for 20 minutes
  15. For ganache, in a small saucepan, heat whipping cream to a boil
  16. Place chips in a bowl
  17. Pour in cream and stir until chips are melted
  18. Cool slightly
  19. Pour caramel sauce over cheesecake
  20. Chill for 30 minutes
  21. Pour ganache over caramel and again, chill for 30 minutes
  22. Drizzle additional caramel sauce and sprinkle with sea salt
  23. Top with whipped cream
