- 6 slices bacon, cut into ½-inch pieces
- 1 onion, chopped fine
- 2 tablespoons tomato paste
- 4 garlic cloves, minced
- 2 teaspoons minced fresh thyme or ½ teaspoon dried
- ? teaspoon red pepper flakes
- ½ cup dry white wine
- ½ cup low-sodium chicken broth
- 1¼ pounds cremini mushrooms, trimmed and halved if small or quartered if large
- 1 (14.5-ounce) can diced tomatoes
- ¼ ounce dried porcini mushrooms, rinsed and minced
- 4 (12-ounce) bone-in split chicken breasts, trimmed (click here)
- salt and pepper
- 1½ tablespoons cornstarch
- 1½ tablespoons water
- ¼ cup minced fresh parsley
Method
- Cook bacon in pressure-cooker pot over medium-high heat until crisp, about 5 minutes
- Using slotted spoon, transfer bacon to paper towel-lined plate; pour off all but 1 tablespoon fat from pot
- Add onion to fat left in pot and cook over medium heat until softened, about 5 minutestir in tomato paste, garlic, thyme, and pepper flakes and cook until fragrant, about 1 minutStir in wine and cook until slightly reduced, about 1 minutStir in broth, cremini mushrooms, tomatoes, and porcini mushroomUsing wooden spoon, scrape up all browned bits stuck on bottom of poSeason chicken with salt and pepper and lay on top of vegetables
HIGH PRESSURE FOR 15 minutes:
- Lock pressure-cooker lid in place and bring to high pressure over medium-high heat
- As soon as pot reaches high pressure, reduce heat to medium-low and cook for 15 minutes, adjusting heat as needed to maintain high pressure
QUICK RELEASE PRESSURE:
- Remove pot from heat
- Quick release pressure, then carefully remove lid, allowing steam to escape away from you
- Before Serving:
- Transfer chicken to serving dish and remove skin
- Tent chicken loosely with aluminum foil and let rest while finishing sauce
- Using large spoon, skim excess fat from surface of sauce, then bring to simmer over medium-high heat
- Whisk cornstarch and water together, then whisk into sauce and cook until thickened, about 1 minute
- Stir in parsley and season with salt and pepper to taste
- Pour sauce over chicken, sprinkle with bacon, and serve
