Ingredients
Makes 4 servings
- 2 garlic cloves
- 1/2 cup slivered almonds
- ¾ teaspoon salt
- 2 cups fresh mint leaves
- 1/2 cup olive oil
- 2 teaspoons orange zest
- 1 pound rotini
Method
- In a food processor, combine the garlic, almonds and salt and process until finely chopped
- Add the mint and process until ground to a paste
- With the machine running, stream in the oil
- Transfer to a small bowl and stir in the orange zest
- In large pot of boiling salted water, cook the rotini over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well, reserving about 1/2 cup of the pasta water
- Transfer pasta to a large serving bowl
- Add the reserved pasta water to the pesto, stirring to make a smooth sauce
- Add the pesto to the pasta and toss gently to combine
- Serve immediately
