Rockfish Parmesan Seafood Recipe

Ingredients

  • 1 pound rockfish fillets — thawed if necessary
  • 2 teaspoons lemon or lime juice
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup flour
  • 1 egg — slightly beaten
  • 1/4 cup fine dry bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons oil
  • salt — to taste.
  • freshly-ground black pepper — to taste.

Method

  1. Cut rockfish into serving sized pieces
  2. Combine lemon juice and Worcestershire sauce; sprinkle on fish
  3. Dust fish lightly with flour on both sides; dip into beaten egg
  4. Combine bread crumbs and cheese; coat fish generously with mixture
  5. Pan-fry fish in oil over medium heat allowing about 10 minutes cooking time per inch of thickness measured at its thickest part or until rockfish flakes easily when tested with a fork
  6. Season to taste with salt and pepper
  7. Oven-fry Method: Prepare rockfish as above
  8. Melt 2 tablespoons butter in shallow pan; place fish in pan
  9. Bake at 500 degrees for 8 to 10 minutes or until rockfish flakes easily when tested with a fork
  10. This recipe yields 4 or 5 servings
