Roasted Veg Spread Recipe

Ingredients

Makes about 2 cups

  • 1 medium sweet potato, peeled and diced
  • 1 medium carrot, sliced
  • 1/2 medium yellow bell pepper, diced
  • 1/2 small yellow onion, chopped
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 1/4 cup tahini (sesame paste)

Method

  1. Preheat the oven to 400°F
  2. In a large bowl, toss the sweet potato, carrot, bell pepper and onion with the oil and spread on a baking sheet
  3. Season with salt and pepper to taste and roast, stirring occasionally, until the vegetables are soft, about 30 minutes
  4. Set aside to cool
  5. Transfer the cooled vegetable mixture to a food processor
  6. Add the tahini and process until smooth
  7. Season with salt and pepper to taste
  8. Transfer the mixture to a medium bowl
  9. Cover and refrigerate until needed
  10. Properly stored, it will keep for up to 3 days
