Ingredients
Makes about 2 cups
- 1 medium sweet potato, peeled and diced
- 1 medium carrot, sliced
- 1/2 medium yellow bell pepper, diced
- 1/2 small yellow onion, chopped
- 2 tablespoons olive oil
- salt and freshly ground black pepper
- 1/4 cup tahini (sesame paste)
Method
- Preheat the oven to 400°F
- In a large bowl, toss the sweet potato, carrot, bell pepper and onion with the oil and spread on a baking sheet
- Season with salt and pepper to taste and roast, stirring occasionally, until the vegetables are soft, about 30 minutes
- Set aside to cool
- Transfer the cooled vegetable mixture to a food processor
- Add the tahini and process until smooth
- Season with salt and pepper to taste
- Transfer the mixture to a medium bowl
- Cover and refrigerate until needed
- Properly stored, it will keep for up to 3 days
