Roasted Lemon Asparagus With Pine Nuts Recipe
Ingredients
Makes 4 servings
- 1 pound thin asparagus, tough ends trimmed
- 2 tablespoons olive oil
- salt and freshly ground black pepper
- 1 garlic clove, minced
- 1/4 cup pine nuts
- 1 tablespoon fresh lemon juice
Method
- Preheat the oven to 425°F
- Lightly oil a baking sheet
- Arrange the asparagus in a single layer on the prepared baking sheet
- Drizzle with the oil and season with salt and pepper to taste
- Sprinkle with garlic and pine nuts and roast until the asparagus is tender, about 10 minutes
- Transfer to a serving platter and sprinkle with lemon juice
- Serve immediately
