Roasted Lemon Asparagus With Pine Nuts Recipe

Ingredients

Makes 4 servings

  • 1 pound thin asparagus, tough ends trimmed
  • 2 tablespoons olive oil
  • salt and freshly ground black pepper
  • 1 garlic clove, minced
  • 1/4 cup pine nuts
  • 1 tablespoon fresh lemon juice

Method

  1. Preheat the oven to 425°F
  2. Lightly oil a baking sheet
  3. Arrange the asparagus in a single layer on the prepared baking sheet
  4. Drizzle with the oil and season with salt and pepper to taste
  5. Sprinkle with garlic and pine nuts and roast until the asparagus is tender, about 10 minutes
  6. Transfer to a serving platter and sprinkle with lemon juice
  7. Serve immediately
