Ingredients
Makes 4 servings
- 31/2 cups cooked brown rice
- 1/2 cup chopped roasted cashews
- 1/2 cup thinly sliced dried papaya
- 4 green onions, chopped
- 3 tablespoons fresh lime juice
- 2 teaspoons agave nectar
- 1 teaspoon grated fresh ginger
- 1/3 cup grapeseed oil
- salt and freshly ground black pepper
Method
- In a large bowl, combine the rice, cashews, papaya and green onions
- Set aside
- In a small bowl, combine the lime juice, agave nectar and ginger
- Whisk in the oil and season with the salt and pepper to taste
- Pour the dressing over the rice mixture, mix well and serve
