Rice Salad With Cashews Dried Papaya Recipe

Ingredients

Makes 4 servings

  • 31/2 cups cooked brown rice
  • 1/2 cup chopped roasted cashews
  • 1/2 cup thinly sliced dried papaya
  • 4 green onions, chopped
  • 3 tablespoons fresh lime juice
  • 2 teaspoons agave nectar
  • 1 teaspoon grated fresh ginger
  • 1/3 cup grapeseed oil
  • salt and freshly ground black pepper

Method

  1. In a large bowl, combine the rice, cashews, papaya and green onions
  2. Set aside
  3. In a small bowl, combine the lime juice, agave nectar and ginger
  4. Whisk in the oil and season with the salt and pepper to taste
  5. Pour the dressing over the rice mixture, mix well and serve
