Ingredients
- 4 ounces thinly sliced jamon serrano (Spanish cured ham)
- 3 tablespoons Spanish extra-virgin olive oil
- 1 tablespoon sherry vinegar
- sea salt to taste
- 4 ounces cantaloupe, thinly sliced
- 1 tablespoon minced chives
Method
- Preheat the oven to 350°F
- Line a baking sheet with parchment paper
- Arrange 2 ounces of the jamon on the prepared baking sheet
- Roast in the oven for 10 minutes or until crisp, then set aside to cool
- Once cool enough to handle, crumble the jamon with your fingers
- Whisk the olive oil and sherry vinegar together in a mixing bowl and season to taste with salt
- Drape alternating slices of melon and the remaining jamon on each plate like loose ribbons
- Drizzle some dressing on top and garnish with chives and the crumbled crispy jamon
