Ribbons Of Melon And Ham Spanish Recipe

Ingredients

  • 4 ounces thinly sliced jamon serrano (Spanish cured ham)
  • 3 tablespoons Spanish extra-virgin olive oil
  • 1 tablespoon sherry vinegar
  • sea salt to taste
  • 4 ounces cantaloupe, thinly sliced
  • 1 tablespoon minced chives

Method

  1. Preheat the oven to 350°F
  2. Line a baking sheet with parchment paper
  3. Arrange 2 ounces of the jamon on the prepared baking sheet
  4. Roast in the oven for 10 minutes or until crisp, then set aside to cool
  5. Once cool enough to handle, crumble the jamon with your fingers
  6. Whisk the olive oil and sherry vinegar together in a mixing bowl and season to taste with salt
  7. Drape alternating slices of melon and the remaining jamon on each plate like loose ribbons
  8. Drizzle some dressing on top and garnish with chives and the crumbled crispy jamon
