Ingredients
Makes about 3 cups
- 1 ripe mango, peeled, pitted and cut into 1/4-inch dice
- 1/4 cup finely minced red bell pepper
- 1/4 cup finely minced red onion
- 1 teaspoon grated fresh ginger
- 1 small jalapeno, seeded and minced
- 2 tablespoons chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1/4 teaspoon sugar
- salt
- 1 ripe Hass avocado
Method
- In a large bowl, combine the mango, bell pepper, onion, ginger and chile
- Add the cilantro, lime juice, sugar and salt to taste
- Stir to combine, then refrigerate for 30 minutes
- Just before serving, pit, peel and cut the avocado into 1/4-inch dice
- Add it to the relish and stir gently to combine
- This relish is best if used shortly after it is made
