Red Pepper Mango Avocado Relish Recipe

Ingredients

Makes about 3 cups

  • 1 ripe mango, peeled, pitted and cut into 1/4-inch dice
  • 1/4 cup finely minced red bell pepper
  • 1/4 cup finely minced red onion
  • 1 teaspoon grated fresh ginger
  • 1 small jalapeno, seeded and minced
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon sugar
  • salt
  • 1 ripe Hass avocado

Method

  1. In a large bowl, combine the mango, bell pepper, onion, ginger and chile
  2. Add the cilantro, lime juice, sugar and salt to taste
  3. Stir to combine, then refrigerate for 30 minutes
  4. Just before serving, pit, peel and cut the avocado into 1/4-inch dice
  5. Add it to the relish and stir gently to combine
  6. This relish is best if used shortly after it is made
