Ingredients
SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 4 minutes at HIGH pressure
- 2 tablespoons olive oil
- 1 small white onion, chopped (½ cup)
- 1 small head red cabbage, outermost leaves removed, quartered, cored, and coarsely shredded
- 1/3 cup chicken or vegetable broth
- 1/3 cup sweet red vermouth
- 1 tablespoon honey
- pinch sea salt, plus more to taste
- 1½ cups halved seedless green or red grapes
- juice of ½ lemon
Method
- In a 5- to 7-quart pressure cooker, heat the oil over medium-high
- Add the onion and cook until soft, stirring a few times, about 3 minutes
- Add the cabbage and toss to combine with the oil and warm through
- Stir in the broth, vermouth, honey, and salt and bring to a boil
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 4 minutes
- Remove the pot from the heat
- Open the cooker with the Quick Release method
- Be careful of the steam as you remove the lid
- Add the grapes and lemon juice to the pot
- Cover partially with the lid (don’t lock it) and let the heat of the cabbage warm the grapes through for 1 minute
- Taste for salt and serve immediately
