Red Cabbage With Red Vermouth And Grapes Pressure Cooker Recipe

Ingredients

SERVES 4 to 6 – Cooker: 5- to 7-quart – Time: 4 minutes at HIGH pressure

  • 2 tablespoons olive oil
  • 1 small white onion, chopped (½ cup)
  • 1 small head red cabbage, outermost leaves removed, quartered, cored, and coarsely shredded
  • 1/3 cup chicken or vegetable broth
  • 1/3 cup sweet red vermouth
  • 1 tablespoon honey
  • pinch sea salt, plus more to taste
  • 1½ cups halved seedless green or red grapes
  • juice of ½ lemon

Method

  1. In a 5- to 7-quart pressure cooker, heat the oil over medium-high
  2. Add the onion and cook until soft, stirring a few times, about 3 minutes
  3. Add the cabbage and toss to combine with the oil and warm through
  4. Stir in the broth, vermouth, honey, and salt and bring to a boil
  5. Close and lock the lid
  6. Set the burner heat to high
  7. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  8. Set a timer to cook for 4 minutes
  9. Remove the pot from the heat
  10. Open the cooker with the Quick Release method
  11. Be careful of the steam as you remove the lid
  12. Add the grapes and lemon juice to the pot
  13. Cover partially with the lid (don’t lock it) and let the heat of the cabbage warm the grapes through for 1 minute
  14. Taste for salt and serve immediately
