Ingredients
Makes 4 burritos
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 medium red bell pepper, chopped
- 1 1/2 cups cooked or 1 can dark red kidney beans, drained and rinsed
- 1 cup tomato salsa plus extra if desired
- 4 (10-inch) flour tortillas, warmed
- 1 cup hot cooked rice
- 1 ripe Hass avocado, pitted, peeled and cut into 1/4-inch slices
Method
- In a medium saucepan, heat the oil over medium heat
- Add the onion and bell pepper, cover and cook until softened, about 5 minutes
- Add the beans and salsa and cook, stirring to combine
- Simmer, mashing the beans as you stir them, until hot
- To assemble burritos, place 1 tortillas on a work surface and spoon about 1/2 cup of the bean mixture down the center
- Top with the rice, followed by slices of avocado and extra salsa, if desired
- Roll up tightly, tucking in the sides
- Repeat with the remaining ingredients
- Serve seam-side down
