Daikon Radish Salad
Ingredients
Makes 4 servings
- 1 medium daikon radish, cut into 1/4-inch slices
- 3 small red radishes, cut into 1/4-inch slices
- 1/4 cup rice vinegar
- 1 tablespoon sugar
- 2 teaspoons mirin
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon salt
- 1 tablespoon black sesame seeds, for garnish
Method
- In a small bowl, combine the daikon and red radishes and set aside
- In a separate small bowl, combine the vinegar, sugar, mirin, oil and salt and mix well
- Pour the dressing over the radishes
- Set aside for at least 15 minutes before serving
- Spoon the radish salad into 4 small bowls, sprinkle with sesame seeds and serve
