Daikon Radish Salad

Daikon Radish Salad

Ingredients

Makes 4 servings

  • 1 medium daikon radish, cut into 1/4-inch slices
  • 3 small red radishes, cut into 1/4-inch slices
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 2 teaspoons mirin
  • 1 teaspoon toasted sesame oil
  • 1/2 teaspoon salt
  • 1 tablespoon black sesame seeds, for garnish

Method

  1. In a small bowl, combine the daikon and red radishes and set aside
  2. In a separate small bowl, combine the vinegar, sugar, mirin, oil and salt and mix well
  3. Pour the dressing over the radishes
  4. Set aside for at least 15 minutes before serving
  5. Spoon the radish salad into 4 small bowls, sprinkle with sesame seeds and serve
