Corn Fritters
Ingredients
Makes 4 servings
- 1/2 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- pinch sugar
- 1/2 cup plain soy milk
- 2 cups fresh or thawed frozen corn kernels Canola or grapeseed oil, for frying
Method
- Preheat the oven to 250°F
- In a large mixing bowl, combine the flour, cornmeal, baking powder, salt and sugar
- Stir in the soy milk, then add the corn kernels and stir to combine
- In a large skillet, heat a thin layer of oil over medium heat
- Drop the batter by the tablespoonful into the skillet and fry until golden brown, turning once, 2 to 3 minutes per side
- Transfer cooked fritters to a heat-proof platter and keep warm in the oven while you cook the rest
- Serve immediately
