Mussels Marinara

Ingredients

  • Serving Size : 2
  • 2 pound mussels
  • 1/2 cup red wine
  • 2 pound tomato
  • mushrooms

Method

  1. Clean 2lbs mussels in water and lots of black pepper for an hour and then drain
  2. Clean beards off mussels.
  3. In a large pan, saute garlic in 2 tbls of olive oil, slow heat.
  4. Add basil leaves, Italian seasoning, red pepper flakes, parsley,>> onions, mushrooms and green pep- pers.
  5. Everything should be fresh,esp mushrooms and add ingredientes to taste.
  6. I add a lot because I love full flavors.
  7. Saute for 15 minutes and then add 2- 1 lb cans or larger, of peeled tomatoes.
  8. Break the tomatoes with your hands and blend.
  9. Cover and simmer for 1 hour, stirring frequently.
  10. Add 2 fresh, diced tomatoesand cook for another 10-15 min longer.
  11. Add 1/4-1/2cup of dry red wine &cook for another 10 minutes.
  12. Don’t over-heat, don’t dry up the sauce.
  13. I love my sauces watery as you seem to.
  14. Adjust seasonings to taste as you go.
  15. Use freshly grated parmasan AND romano cheese for the top- ping &add all on top of cooked pasta.
  16. Add fresh pepper- black &/or red.
  17. Serve with a DARK green salad and serve with a slightly chilled Chianti red wine.
  18. Add candle light and with Classical guitar in the background makes quite an evening.
  19. I hope you can adjust the seasonings to your lik- ing because that’s how I cook-according to my taste.
