Lemon Cheesecake

Ingredients

  • 1 (9 inch) graham cracker pie crust
  • 2 (8 ounce) packages cream cheese
  • 1/2 cup white sugar
  • 1 1/2 tablespoons all-purpose flour
  • 2 1/2 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 2 eggs
  • 1 (8 ounce) container lemon yogurt

Method

  1. Preheat oven to 350F
  2. In a large mixing bowl, beat cream cheese and sugar until smooth
  3. Gradually add in flour, lemon juice, lemon zest, and eggs, one at a time until just combined
  4. Stir in yogurt
  5. Pour into crust
  6. Place into a baking pan filled with 1 inch of water
  7. Bake 50 to 60 minutes, until set
  8. Cover, cool and chill overnight
  9. Garnish suggestion – whipped topping and fresh lemon slices
