Broccoli Soup Slow Cooker
Ingredients
- 1 pound (900 g) broccoli
- 700 ml water
- 1 cup (235 ml) skim milk
- ½ cup (58 g) Cheddar cheese, cut into small cubes
Method
- Chop broccoli
- Remove any tough stalks and discard
- Place chopped broccoli and water (add more water to cover, if necessary) in slow cooker
- Cover and cook on high 1 to 2 hours
- Add skim milk
- Cook for an additional 15 minutes
- Stir in cheese and cook until cheese is melted into soup
- Yield: 5 servings
- Per serving: 353 g water; 135 calories (31% from fat, 28% from protein, 40% from carb)
