Raspberry Chocolate Cake Recipe

Ingredients

Servings : 4-6 dishes.

  • 3 cups all purpose flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1/2 cup cocoa
  • 1/4 cup coconut oil
  • 1/2 cup raspberry jam
  • 1/4 cup applesauce, unsweetened
  • 2 teaspoons white wine vinegar
  • 2 cups water
  • 1 pinch of salt
  • 1/2 cup raspberry jam to glaze

Method

  1. In a bowl, mix the flour with the sugar, baking soda, cocoa and a pinch of salt
  2. Stir in the oil, raspberry jam, applesauce, water and white wine vinegar
  3. Using a hand mixer, beat for 2 minutes then pour the batter into a 9-inch round cake pan, lined with parchment paper
  4. Bake the cake in a preheated oven for 30-40 minutes or until a skewer inserted in the cake comes out clean
  5. Remove from oven and let it cool in the pan
  6. Once cold, cut it in half lengthwise then spread raspberry jam between the cake layers
