Ranchero Sauce
Ingredients
Makes about 2 1/2 cups
- 1 tablespoon olive oil
- 1/2 cup chopped yellow onion
- 1 jalapeno, seeded and minced
- 2 garlic cloves, minced
- 1 (14.5-ounce) can crushed tomatoes
- 1 (4-ounce) can chopped mild green chiles, drained
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 cup minced fresh cilantro
Method
- In a medium saucepan, heat the oil over medium heat
- Add the onion, jalapeno and garlic
- Cover and cook until softened, about 5 minutes
- Stir in the tomatoes, green chiles, cumin and chili powder
- Simmer, uncovered, for 15 to 20minutes to allow flavors to blend
- Just before serving, stir in the cilantro
- Serve immediately
- If not using right away, cool the sauce to room temperature, then transfer to a container, cover and refrigerate until needed
- Properly stored, the sauce will keep for 3 to 4 days
- Reheat the sauce in a saucepan over low heat until hot
