Rainbow Chard With Goji Berries Pistachios Recipe

Ingredients

Makes 4 servings

  • 2 tablespoons olive oil
  • 1 small red onion, minced
  • 2 garlic cloves, minced
  • 1 medium bunch rainbow chard, tough stems removed and finely chopped
  • salt and freshly ground black pepper
  • 1/3 cup goji berries*
  • 1/3 cup unsalted shelled pistachios*

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, about 5 minutes
  3. Add the garlic and cook, stirring, to soften for 30 seconds
  4. Add the chard and cook, stirring until wilted, 3 to 4 minutes
  5. Season with salt and pepper to taste and cook, uncovered, stirring occasionally, until tender, about 5 to 7 minutes
  6. Add the goji berries and pistachios and toss to combine
  7. Serve immediately
