Ingredients
Makes 4 servings
- 2 tablespoons olive oil
- 1 small red onion, minced
- 2 garlic cloves, minced
- 1 medium bunch rainbow chard, tough stems removed and finely chopped
- salt and freshly ground black pepper
- 1/3 cup goji berries*
- 1/3 cup unsalted shelled pistachios*
Method
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook until softened, about 5 minutes
- Add the garlic and cook, stirring, to soften for 30 seconds
- Add the chard and cook, stirring until wilted, 3 to 4 minutes
- Season with salt and pepper to taste and cook, uncovered, stirring occasionally, until tender, about 5 to 7 minutes
- Add the goji berries and pistachios and toss to combine
- Serve immediately
