Radish Cucumber Salad Tarragon Vinaigrette Recipe

Ingredients

Makes 4 servings

  • 2 medium English cucumbers, peeled, halved, seeded, cut into 1/4-inch slices
  • 6 small red radishes, cut into 1/8-inch slices
  • 2 1/2 tablespoons tarragon vinegar
  • 1/2 teaspoon dried tarragon
  • 1/4 teaspoon sugar
  • salt and freshly ground black pepper
  • 1/4 cup olive oil

Method

  1. In a large bowl, combine the cucumbers and the radishes and set aside
  2. In a small bowl, combine the vinegar, tarragon, sugar and salt and pepper to taste
  3. Whisk in the oil until well blended, then add the dressing to the salad
  4. Toss gently to combine and serve
