Ingredients
Makes 4 servings
- 2 garlic cloves
- 1/2 teaspoon salt
- 1/2 cup lightly toasted walnut pieces
- 1/2 cup chopped fresh parsley
- 1/2 teaspoon crushed red pepper (optional)
- 1/3 cup olive oil
- 1 pound radiatore
- 1 tablespoon walnut oil (optional)
Method
- In a food processor, combine the garlic and salt and process until garlic is minced
- Add the walnuts, parsley and crushed red pepper, if using and process until ground to a paste
- With the machine running, stream in the oil and process until well blended
- Set aside
- In a large pot of boiling salted water, cook the radiatore over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well, reserving 1/3 cup of the pasta water
- Transfer the pasta to a large serving bowl
- Add the reserved pasta water to the pesto and blend to make a smooth sauce
- Add the pesto to the pasta and toss gently to combine
- Drizzle with the walnut oil, if using and serve immediately
