Quinoa Salad With Black Beans Tomatoes Recipe
Ingredients
Makes 4 servings
- 3 cups water
- 1 1/2 cups quinoa, well rinsed
- salt
- 1 1/2 cups cooked or 1 can black beans, drained and rinsed
- 4 ripe plum tomatoes, cut into 1/4-inch dice
- 1/3 cup minced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons sherry vinegar
- 1/4 teaspoon freshly ground black pepper
Method
- In a large saucepan, bring the water to boil over high heat
- Add the quinoa, salt the water and return to a boil
- Reduce heat to low, cover and simmer until the water is absorbed, about 20 minutes
- Transfer the cooked quinoa to a large bowl
- Add the black beans, tomatoes, onion and parsley
- In a small bowl, combine the olive oil, vinegar, salt to taste and pepper
- Pour the dressing over the salad and toss well to combine
- Cover and set aside for 20 minutes before serving
