Quinoa Chickpea Pilaf With Orange Pistachios Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium red onion, minced
  • 1 1/2 cups quinoa, well rinsed
  • 3 cups vegetable broth or water
  • salt
  • 3 cups or 2 (15.5-ounce) cans chickpeas, drained and rinsed
  • 1/4 teaspoon ground cayenne
  • 1 tablespoon minced fresh chives
  • 1 orange, peeled, segmented and chopped
  • 1/2 cup shelled pistachios

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until tender, 10minutes
  3. Stir in the quinoa, add the broth and bring to a boil
  4. Reduce heat to low, add salt to taste, cover and simmer until the quinoa has absorbed all the liquid, 20 to 30 minutes
  5. Remove from heat and set aside for 5 minutes, then stir in the chickpeas, cayenne, chives, orange and pistachios
  6. Taste, adjusting seasonings if necessary
  7. Serve immediately
