Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 medium red onion, minced
- 1 1/2 cups quinoa, well rinsed
- 3 cups vegetable broth or water
- salt
- 3 cups or 2 (15.5-ounce) cans chickpeas, drained and rinsed
- 1/4 teaspoon ground cayenne
- 1 tablespoon minced fresh chives
- 1 orange, peeled, segmented and chopped
- 1/2 cup shelled pistachios
Method
- In a large saucepan, heat the oil over medium heat
- Add the onion, cover and cook until tender, 10minutes
- Stir in the quinoa, add the broth and bring to a boil
- Reduce heat to low, add salt to taste, cover and simmer until the quinoa has absorbed all the liquid, 20 to 30 minutes
- Remove from heat and set aside for 5 minutes, then stir in the chickpeas, cayenne, chives, orange and pistachios
- Taste, adjusting seasonings if necessary
- Serve immediately
