Quick Corn Bread Recipe

Ingredients

  • Serving Size : 1
  • 1 1/4 cups sifted flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 teaspoon soda
  • 2 tablespoons sugar
  • 1 cup yellow corn meal
  • 3 tablespoons shortening – melted
  • 1 1/4 cups sour milk
  • 2 Eggs – well beaten

Method

  1. Sift flour once, measure, add baking powder, salt, soda, and sugar, and sift again.
  2. Add corn meal.
  3. Combine milk and eggs.
  4. Add to dry ingredients, mixing well.
  5. Bake in greased shallow pan in hot oven (425 degrees) 40 minutes, or until done.
  6. May also be baked in corn stick pans.
