Quick Baked Cod Seafood Recipe

Ingredients

  • 1/2 pound cod fillets — thawed if necessary
  • salt and pepper.
  • 1 tomato — peeled and chopped
  • 1 1/2 teaspoons green onion — chopped
  • 1/4 teaspoon basil — crushed

AND

  • 1/4 teaspoon oregano
  • 1 teaspoon butter or margarine
  • 1/4 cup shredded Monterey jack cheese
  • 1 tablespoon grated Parmesan cheese

Method

  1. Cut cod into serving-size pieces; place in buttered baking dish
  2. Sprinkle with salt and pepper
  3. Combine tomato, onion and seasonings; spoon over cod
  4. Dot with butter
  5. Bake at 450ºF 8 to 10 minutes or until cod flakes easily when tested with a fork
  6. Sprinkle with cheeses; bake until melted
