Ingredients
Makes about 1 cup
- 1 jalapeno, seeded and chopped
- 3 green onions, chopped
- 1 garlic clove, chopped
- 1 tablespoon sugar
- 1/4 cup pineapple juice
- 2 tablespoons fresh or canned chopped pineapple
- 2 tablespoons soy sauce
- 2 teaspoons dried thyme
- 1 teaspoon ground allspice
- 1/4 cup olive oil
Method
- In a small bowl, combine the jalapeno, green onions, garlic and sugar
- Stir in the pineapple juice, chopped pineapple, soy sauce, thyme and allspice
- Stir in the oil and mix well
- If not using right away, cover and refrigerate until needed
- Properly stored, the marinade will keep for 2 to 3 days
