Punabi Pineapple Marinade Recipe

Ingredients

Makes about 1 cup

  • 1 jalapeno, seeded and chopped
  • 3 green onions, chopped
  • 1 garlic clove, chopped
  • 1 tablespoon sugar
  • 1/4 cup pineapple juice
  • 2 tablespoons fresh or canned chopped pineapple
  • 2 tablespoons soy sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon ground allspice
  • 1/4 cup olive oil

Method

  1. In a small bowl, combine the jalapeno, green onions, garlic and sugar
  2. Stir in the pineapple juice, chopped pineapple, soy sauce, thyme and allspice
  3. Stir in the oil and mix well
  4. If not using right away, cover and refrigerate until needed
  5. Properly stored, the marinade will keep for 2 to 3 days
