Ingredients
Makes 4 servings
- 4 ounces green beans, trimmed and cut into 1-inch pieces
- 3 cups cooked or 2 (15.5-ounce) cans Great Northern or other white beans, drained and rinsed
- 1/3 cup minced red onion
- 1 cup ripe cherry tomatoes, halved
- 1/4 cup pitted nicoise olives
- 1/3 cup olive oil
- 3 tablespoons tarragon vinegar
- 1 teaspoon Dijon mustard
- 2 garlic cloves, minced
- 2 tablespoons minced fresh parsley
- 1/4 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Method
- Steam the green beans until just tender, about 7 minutes and transfer them to a large bowl
- Add the white beans, onion, tomatoes and olives and set aside
- In a small bowl, combine the oil, vinegar, mustard, garlic, parsley, sugar, salt and pepper
- Whisk until blended and pour over the salad
- Toss gently until well mixed
- Taste, adjusting seasonings if necessary and serve
