Ingredients
SERVES 2 to 4 – Cooker: 6- to 8-quart – Time: 10 minutes at HIGH pressure
BOURBON BBQ SAUCE
- 3 cups bottled BBQ sauce of your choice
- 2 tablespoons brown sugar
- 3 ounces bourbon
- 1 tablespoon sherry vinegar or red wine vinegar
CHICKEN
- 2 tablespoons olive oil
- 1 large white onion, chopped
- 2 cloves garlic, chopped
- 1½ cups Bourbon BBQ Sauce, plus ½ cup for glazing
- ½ cup water
- 2 tablespoons reduced-sodium soy sauce
- 2 teaspoons grated peeled fresh ginger
- 1½ teaspoons tamarind concentrate
- 1 (4-pound) chicken, cut into quarters and skin removed
Method
- Make the Bourbon BBQ Sauce
- Combine all the ingredients in a small saucepan and bring to a simmer over low heat
- Let simmer, stirring occasionally, for about 6 minutes
- Use immediately or let cool, then store in an airtight container in the refrigerator for up to 3 weeks
Makes about 3½ cups, which is more than you will need
- In a 6- to 8- quart pressure cooker, heat the oil over medium heat
- Add the onion and garlic and cook, stirring a few times until the vegetables soften, about 3 minutes
- Stir in the BBQ sauce, water, soy sauce, ginger, and tamarind concentrate
- Add the chicken, leg quarters first, then the breasts, meaty side up, nestling the pieces into the sauce
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 10 minutes
- Remove the pot from the heat
- Open the cooker with the Quick Release
- Be careful of the steam as you remove the lid
- Preheat the broiler
- Transfer the chicken to an oiled broiler rack
- Bring the sauce in the pot to a boil over medium-high heat
- Cook, uncovered, stirring often to avoid scorching, until the sauce has thickened, about 3 minutes
- Brush the chicken with the ½ cup reserved BBQ sauce
- Position the broiler pan 6 inches from the heat and broil until the surface of the chicken is glazed, about 2 minutes
- Alternately you can fire up a gas grill and brown the chicken outside
- Serve hot, with the additional sauce on the side
