Potato Souffle Recipe

Ingredients

  • 4 potatoes, peeled and cut into chunks
  • 1 leek, cleaned and sliced
  • 1 1/2 C. hot water
  • 1/2 tsp salt
  • fresh ground pepper
  • 2 tbsp nonfat milk

Method

  1. In a pan, add the potatoes and enough water to cover and bring to a boil
  2. Reduce the heat and simmer for about 10 minutes
  3. Drain the potatoes, reserving 1/4 C of the cooking liquid
  4. Heat a medium, greased nonstick skillet over medium-high heat and cook the leek, hot water, salt and pepper until all the liquid is absorbed, stirring occasionally
  5. With a potato masher, mash the potatoes into a bowl
  6. Add the milk and the reserved cooking liquid, one tbsp at a time and mix until fluffy
  7. Stir in the cooked leek
  8. Transfer the mixture into a greased 1-quart souffle dish and keep aside, covered up to 2 hours
  9. Set your oven to 450 degrees F
  10. Cook, uncovered in the oven for about 30 minutes
