- 11/2 pounds red potatoes, unpeeled and cut into roughly 11/2-inch pieces
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1/4 cup diced red onion
- 2 cups frozen peas
- 1 cup frozen or canned corn
- sea salt and cracked black pepper
Method
- Bring a large pot of water to a boil, then add the potatoes
- Cook until the potatoes are tender and can be easily pierced with a fork, about 30 minutes
- To a small nonstick skillet over medium heat, add the olive oil, garlic, and onion
- Cook until the onion is brown and translucent, about 5 minutes, being careful not to burn the garlic
- Remove the skillet from the heat and set aside
- Remove the potatoes from the boiling water-keep the water going-and place them in a large bowl
- Add the frozen peas to the water and cook for 3 minutes, then remove
- Add about 11/2 cups of the peas to the bowl with the potatoes and reserve the rest
- Mix and mash the potatoes and peas until they are well combined
- It should resemble a mash with flecks of green throughout
- Fold in the remaining peas and corn
- The heat from the potatoes and peas will thaw the corn
- Add the sauteed garlic and onion and any olive oil left in the pan, and mix everything together
- Season to taste with salt and pepper
- Serve
