Ingredients
- Serves: 6
- 1 1/2 lbs potatoes, peeled and cut into pieces
- 1 lb okra, cut the ends and sliced
- 2 cups vegetable stock
- 13 oz can coconut milk
- 1 1/2 tbsp curry powder
- 3/4 tsp red pepper flakes
- 2 tsp fresh ginger, grated
- 4 garlic cloves, minced
- 1 large onion, chopped
- 1 1/2 tbsp vegetable oil
- 1 bell pepper, seeded and chopped
- 1 1/2 tsp salt
Method
- Add potatoes, bell pepper, and okra into the slow cooker.
- Heat oil in a pan over medium heat.
- Add garlic, onion, and ginger to the pan and saute for 5 minutes.
- Remove pan from heat and stir in spices.
- Transfer pan mixture into the slow cooker and stir well.
- Cover and cook on low for 3 hours.
- Stir well and serve with rice.
