Ingredients
- 1 can red kidney beans
- 2 1/2 qt. water
- 1 lb. chopped kale
- 6 med. size potatoes, cubed
- 2 fresh tomatoes, cut into quarters
- 1 med. onion, whole
- 1/2 lb. linguica, cut into 1/2 inch rings
- 2 heaping tbsp. vegetable shortening
- 1 tbsp. salt of taste
- 1 tsp. crushed pepper
- 1 tbsp. chopped fennel (tuncho)
Method
- Strain beans through food mill and add to water
- Place in a 4 to 6 quart pan and bring to a boil
- Chop kale into small pieces and add to water
- Add cubed potatoes, onion, Crisco, tomato and linguica, and allow to boil for about 25 minutes, before you shut off fire
- Add fennel
- Makes 8 to 10 servings
