Portuguese Pork With Lemon Recipe

Ingredients

  • 2 lb. pork boneless shoulder
  • 2 cloves garlic, chopped
  • 2 tbsp. lemon juice
  • 2 tbsp. olive or vegetable oil
  • 1 tsp. salt
  • 1/4 tsp. ground cumin
  • 1/4 to 1/2 tsp. crushed red peppers
  • 1/4 c. water
  • 1/2 c. pitted ripe olives

Method

  1. Trim fat from pork; cut pork into 3/4 inch cubes
  2. Toss pork, garlic, lemon juice, 1 tablespoon oil, the salt, cumin and red peppers in glass or plastic bowl
  3. Cover and refrigerate, stirring occasionally, at least 8 hours
  4. Remove pork from marinade; reserve any remaining marinade
  5. Heat 1 tablespoon oil in skillet until hot
  6. Cook and stir pork in oil over medium heat until liquid has evaporated and pork is brown; drain
  7. Add water and reserved marinade
  8. Cover and simmer until pork is tender, about 30 minutes
  9. Add water if necessary
  10. Stir in olives
  11. Serves 6
