Ingredients
- 5 lb. chuck roast
- 2 tbsp. ground cinnamon
- 4 c. water
- 6 lg. onions, quartered
- 8 carrots, cut in lg. slices
- 1 (28 oz.) can Italian tomatoes
- 3-4 cloves garlic, minced
- 1 c. cider vinegar
- salt and pepper to taste.
- 8 potatoes, halved
- 1 lb. Chorico sausage
- 1 (6 oz.) can tomato paste + 2 cans water
Method
- Marinate roast in cinnamon, garlic, vinegar and water overnight
- Next day simmer roast in marinade for 1/2 hour on low heat
- Transfer meat to roasting pan
- Add potatoes, onions, carrots, and sausage along with marinade
- Combine tomatoes, tomato paste and water and pour over everything in roaster
- Cover and roast in 350 degree oven for about 3-4 hours
