Ingredients
- 1 1/2 c. black beans
- 6 c. cold water
- 3/4 tsp. salt
- 2 tsp. cider vinegar
- 3/4 c. chopped onion
- 1 med. green pepper, diced
- 1/2 c. chopped celery
- 1 med. potato, diced
- 1 linguinica sausage, chopped
- 8 oz. tomato paste
- 3 cloves garlic, minced
- 2 c. water
- 3 beef bouillon cubes
- 3/4 tsp. cumin
- 1/2 tsp. pepper
- dash of cayenne pepper.
Method
- In a large kettle combine beans, cold water, salt and vinegar
- Bring to boil; lower heat and cook gently, uncovered, about 45 minutes
- Add remaining ingredients, bring to boil, reduce to simmer and cook partially covered 1 hour or until beans are tender, stirring occasionally
- Serves 4-6
