Ingredients
- 1 lb. pink beans (may substitute pinto beans)
- 2 tsp. ground cumin seed
- 2 tsp. ground allspice
- 2 tsp. ground cloves
- 1 (8 oz.) can tomato sauce
- 1 lg. onion
- 1 lb. slab bacon
- 1/2 lb. linguica (Portuguese sausage)
- salt and pepper.
Method
- Clean and wash dried beans, no need to soak
- Use at least a 3 quart pan, cover beans with 2 inches of water bring to a boil
- Add spices and simmer until beans tender
- Add meats and simmer until meat are done
- Stir in tomato sauce and coarsely chopped onion
- Serve with beef or chicken and lots of French bread
