Ingredients
- pork loin chops
- 1 tbsp (15 ml) olive oil
- 1 cup (160 g) sliced onions
- 2-3 sweet potatoes, peeled and cut into large chunks
- 1 cup (235 ml) low-salt chicken broth
Method
- In a large skillet, heat oil over medium-high heat
- Brown pork chops on both sides
- Spray the inside surface of a slow cooker with nonstick cooking spray
- Arrange sliced onions in the bottom and place pork chops on top of onions
- Place sweet potatoes on top
- Pour broth over everything
- Cover and cook on low for 5 to 6 hours
- Yield: 4 servings
- Per serving: 229 g water; 235 calories (31% from fat, 40% from protein, 30% from carb)
