Ingredients
Makes about ¾ cup
- 2 cups pomegranate juice
- 1/3 cup sugar
- 2 tablespoons fresh lemon juice
Method
- In a large saucepan, combine the pomegranate juice and sugar and cook over medium-high heat
- Cook, stirring until the sugar dissolves
- Reduce heat to low and simmer over medium-high heat until the sugar has dissolved, about 5 minutes
- Reduce heat just enough to maintain a simmer and cook until the juice thickens and reduces to less than a cup
- Stir in the lemon juice and pour into a container or jar with a tight-fitting lid
- Let cool, uncovered, then store tightly covered in the refrigerator where it will keep for several days
