Pomegranate Molasses Recipe

Ingredients

Makes about ¾ cup

  • 2 cups pomegranate juice
  • 1/3 cup sugar
  • 2 tablespoons fresh lemon juice

Method

  1. In a large saucepan, combine the pomegranate juice and sugar and cook over medium-high heat
  2. Cook, stirring until the sugar dissolves
  3. Reduce heat to low and simmer over medium-high heat until the sugar has dissolved, about 5 minutes
  4. Reduce heat just enough to maintain a simmer and cook until the juice thickens and reduces to less than a cup
  5. Stir in the lemon juice and pour into a container or jar with a tight-fitting lid
  6. Let cool, uncovered, then store tightly covered in the refrigerator where it will keep for several days
