Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 3 garlic cloves, chopped
- 8 ounces white mushrooms, lightly rinsed, patted dry and chopped
- 3 cups marinara sauce
- 1 teaspoon ground fennel seed
- 1/2 teaspoon crushed red pepper
- 1/4 teaspoon dried oregano
- 1 recipe Basic Polenta, warm
Method
- In a large saucepan, heat the oil over medium heat
- Add the onion, cover and cook until softened, 5 minutes
- Add the garlic and mushrooms and cook until softened, uncovered, about 3 minutes
- Stir in the marinara sauce, fennel seed, crushed red pepper and oregano
- Reduce the heat to low and simmer for 10 minutes
- Spoon the warm polenta into 4 shallow bowls, top with sauce and serve
