Polenta With Spicy Tomato Ragu Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, chopped
  • 8 ounces white mushrooms, lightly rinsed, patted dry and chopped
  • 3 cups marinara sauce
  • 1 teaspoon ground fennel seed
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon dried oregano
  • 1 recipe Basic Polenta, warm

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, 5 minutes
  3. Add the garlic and mushrooms and cook until softened, uncovered, about 3 minutes
  4. Stir in the marinara sauce, fennel seed, crushed red pepper and oregano
  5. Reduce the heat to low and simmer for 10 minutes
  6. Spoon the warm polenta into 4 shallow bowls, top with sauce and serve
