Poached Fish Slow Cooker Recipe

Ingredients

  • 1 tbsp (15 ml) olive oil
  • 1 cup (160 g) finely chopped onion
  • ½ cup (120 ml) fish stock
  • 1 can (8 ounces, or 225 g) no-salt-added tomato sauce
  • ½ teaspoon minced garlic
  • 1/8 teaspoon cumin
  • 2 tbsps (28 ml) lemon juice
  • 1½ pounds (680 g) haddock, or other firm white fish

Method

  1. Heat oil in a skillet and cook onion until soft
  2. Bring fish stock to boiling
  3. Combine onion, fish stock, and remaining ingredients except fish in slow cooker and cook on high until it begins to simmer around the edge, about 1½ to 2 hours
  4. Add fish to sauce and cook until fish is tender, about 1 to 1½ hours
  5. Yield: 4 servings
  6. Per serving: 259 g water; 222 calories (21% from fat, 63% from protein, 16% from carb)
