Piquant Green Olive Sauce Recipe

Ingredients

Makes about 1¾ cups

  • 1/2 cup green olives, pitted
  • 2 tablespoons capers
  • 2 tablespoons canned chopped mild green chiles
  • 1 green onion, chopped
  • 1 tablespoon chopped fresh parsley
  • 3 tablespoons olive oil
  • 1/2 cup water
  • salt and freshly ground black pepper

Method

  1. In a blender or food processor, combine the olives, capers, chiles, green onion, parsley and olive oil and process until smooth
  2. Add the water, a little at a time, until you have a smooth sauce
  3. Season with salt and pepper to taste
  4. Serve at room temperature
  5. If not using right away, transfer to a bowl, cover and refrigerate until needed
  6. Properly stored, the sauce will keep for 2 to 3 days
