Ingredients
Makes about 1¾ cups
- 1/2 cup green olives, pitted
- 2 tablespoons capers
- 2 tablespoons canned chopped mild green chiles
- 1 green onion, chopped
- 1 tablespoon chopped fresh parsley
- 3 tablespoons olive oil
- 1/2 cup water
- salt and freshly ground black pepper
Method
- In a blender or food processor, combine the olives, capers, chiles, green onion, parsley and olive oil and process until smooth
- Add the water, a little at a time, until you have a smooth sauce
- Season with salt and pepper to taste
- Serve at room temperature
- If not using right away, transfer to a bowl, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
