Pickled Squash Recipe

Ingredients

  • Serving Size : 1
  • 1 gallon squash – thinly sliced
  • 1 quart white vinegar
  • 6 cups sugar
  • 2 teaspoons celery seeds
  • 2 teaspoons mustard seed
  • 1 teaspoon turmeric
  • 6 green peppers – thinly sliced
  • 6 medium onions – thinly sliced
  • 1 can pimiento – chopped

Method

  1. Soak squash and 1 cup salt with enough water to cover squash for 3 hours.
  2. Drain squash, add sugar, vinegar, and spices.
  3. Bring to a rolling boil, set off heat.
  4. Add peppers, onions and pimientos, put back on heat, bring to a boil again.
  5. Put in jars and seal.
