Basic Pesto
Ingredients
Makes 1/2 CUP
- 1 cup fresh herb leaves (basil, tarragon, mint, etc.)
- 1 tsp salt
- 1 tsp minced garlic
- 2 tbsps. pine nuts, toasted
- 2 tbsps. grated Parmesan
- 6 tbsps. extra-virgin olive oil
Method
- Use a mortar and pestle to combine the herb, salt, garlic and pine nuts into a paste (or combine in a food processor)
- Stir in the cheese
- Drizzle in the olive oil a few teaspoons at a time to combine
- Refrigerate or freeze until ready to use
