Artichoke Tomato Roasted Pepper Relish

Ingredients

Makes about 2 1/2 cups

  • 2 ripe Roma or plum tomatoes, chopped
  • 1 jarred roasted red pepper, chopped
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 3 green onions, minced
  • 1 tablespoon capers
  • 2 tablespoons minced fresh parsley
  • 1/2 teaspoon fresh or dried oregano
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • freshly ground black pepper

Method

  1. In a large bowl, combine all the ingredients
  2. Set aside at room temperature for 30 to 45 minutes before serving
  3. This relish is best if used on the same day it is made
